The saddle cut for double chops... oh gorgeousI am not allowed to cook lamb in the house as my flat mate actually is sick at the smell of it, So tonight we BBQ or as they say in Sweden "we grill"
Lamb is another one of those red meats that folks just aren't generally sure about how much to cook it. Lamb especially from the saddle (lamb chops) is best cooked medium you really will notice a most subtle flavour when your lamb is still a little pink.
One of the best ways to cook this meat is a simple fire and salt affair, so take advantage of those lovely evenings and grill yourself a Barnsley chop or 2. I'm going for an old favourite of mine. Plain barnsley with sea salt with fresh rosemary placed on top to finish,
I'll rub both sides of my Barnsley's with the coarse sea salt and nothing more they will sit on a grill for about 2 minutes on each side. "I'll be fiddling around and turning them by 90 degrees just to get the grill bar pattern right after a min too"... )
Then as I turn over the chops I'll place a sprig of rosemary on top, just the smell of the rosemary warming up is enough to make your mouth start to water. another 90 degree turn in a minute, and then I pull it offServe with boiled new potatoes that have also been sitting on the grill for about 10 mins and you wont believe your taste buds ... yum yum & bon appetite.
